Recipe for Chicken Enchiladas

 Chicken Enchiladas

Ingredients:
2 cups Chicken, cubed (you could also use canned chicken)
1 cup or 8 oz. of sour cream
3 cans cream of chicken soup
1 medium onion, diced
1 pkg flour tortillas
1 small can diced green Chile's
1 pound cheddar cheese
Boil chicken, save broth to thin mixture.
Mix sour cream with 3 cans cream of chicken soup, onion and green Chile's.
Thin with broth. Put 1/3 of the mixture on the bottom of a 9 X 13 inch pan to cover the bottom.
Grate cheese and cube chicken. Mix some sauce with the chicken to moisten.
Roll tortillas in sauce (on a plate). I used large tortillas here, usually I use the smaller ones.
Add about 1/3 cup of chicken mix and sprinkle with cheese.
Roll filled tortilla and place in the pan.

Put remaining sauce over tortillas. Bake at 350 degrees for 45 minutes to 1 hour.

During the last 10 - 15 minutes in baking, I add cheese to the top.
Serve! Delicious!
