Recipe for Lemon Bars

Recipe for Lemon Bars
Ingredients:

Crust:
1 cup butter or margarine
1/2 cup powdered sugar
1/2 teaspoon salt
2 cups flour, unsifted

Filling:
4 eggs, beaten slightly
2 cups sugar
1/2 teaspoon baking powder
1/4 cup flour
1/4 cup lemon juice
rind of one lemon, grated
1. Cream together 1 cup butter or margarine (I use butter) and 1/2 cup powdered sugar
2 Add and mix well ... 1/2 teaspoon salt and 2 cups flour, unsifted
Pat into a 9" x 13" greased baking pan.
Bake at 350 degrees for 15 to 20 minutes. (I bake mine for 18 minutes).
While the crust is baking, make the filling.
1. Mix together...................4 eggs, beaten slightly add 2 cups sugar
1/2 teaspoon baking powder
1/4 cup flourThen I grate my lemon before I juice it.Juice the lemon. It took almost 2 medium size lemons to get the 1/4 cup needed.
Mix in lemon juice and rind. Mix well and wait for the crust to come out.
Mix well again before you pour over the hot crust.

Bake at 350 degrees for 20 to 25 minutes (I bake mine for 25 minutes). When done, sprinkle with powdered sugar.
Cut when cool. I love lemon bars. This is on the top of my goody list - under cherry cheese cake. Mmmmmm Mmmmmmm good.
