Zucchini Cookies
1/2 cup soft butter or margarine
1 cup sugar
1 egg
1 tsp. vanilla
1 cup grated zucchini
2 cups flour
1 tsp soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp cloves
1 cup raisins or chocolate chips
Cream sugar and butter together. Add egg and vanilla.
Sift dry ingredients together and add to creamed mixture.
Add grated zucchini.
Stir in raisins or chocolate chips.
Bake in 350 degree oven for 10 - 12 minutes until they are lightly browned.

Hmmm...I have never had zucchini cookies...love the bread so I would probably love this!
Oh my yumminess! I know it's a joke to have too much Zucchini..but I seriously can't get enough of it. We eat it so many different ways I could do a cookbook all about zucchini...

YUMMY!! Thanks for sharing this recipe. This reminds me of my pumpkin cookies recipe and if you want to add even more yumminess to your cookies they are really good frosted with cream cheese frosting.
YEA, for garden fresh carrots!! Carrots, beets, spinach and zucchini are my favorite garden recipe. I'm so glad your harvest is producing well for you.
