Recipe: Chewy Granola Bars

Recipe for yummy, chewy granola bars.
Ingredients:

1 cup butter, softened
1/2 cup honey
1/3 cup packed brown sugar
1 teaspoon vanilla extract
1 cup flour
1 teaspoon baking soda
3 cups quick oats
1 1/2 cups Rice Krispies
2 cups chocolate chips (I use milk chocolate)


Preheat oven to 325 degrees. Lightly grease one 9x13 inch pan.

In large mixing bowl beat butter until smooth.
Add honey, brown sugar, vanilla and mix well.

Add flour and soda and mix well.

Stir in oats, rice krispies and chocolate chips.

Press down firmly in greased pan. (pack it down really good or it will crumble).

Bake at 325 degrees for 18 - 22 minutes or until golden brown.

Let cool for 10 minutes then cut into bars.

Let bars cool completely in pan before removing or serving.

We love these granola bars. Homemade is better!

I have been making homemade granola bars all summer and with Jade starting Cross Country practices, he would much rather take my homemade granola bars to have for energy instead of having an Odwalla or Clif bar. I had to make up another batch this week so he would have some for this weeks practices and meet.

    Your statement is SO true...homemade IS better and it's amazing how much kids realize that and would rather have homemade than store bought any day!!

    Brady is SO lucky to have you for his mom...you do SO many wonderful things for him.

    Your recipe looks wonderful...and you always inspire!
