Recipe: Homemade Hot Pockets

Our Easter ham was really good, best texture and flavor I've had in a long time. We ended up having lots and lots of left overs. We've ate ham sandwiches, but I knew there was no way I would get it eaten in time. I decided to try a hot pocket recipe with some of the left over ham.

I used my honey wheat bread recipe for the bread part of the Hot pocket. While the bread machine was making the dough, I chopped up ham and shredded mozzarella cheese and medium American cheese in a bowl (I had both in my fridge). (You could also use white bread, frozen bread, pizza dough).
I divided the bread dough into 8 pieces and rolled it out.
Added ham.
Then cheese.
1 beaten egg is needed to seal the edges. Brush edges with the egg wash. Then fold the side over to the other edge, tucking in the stuffing as I pinched the sides together. The second time I did this, I used a fork to crimp the edge. I did this so I would NOT have leakage of the cheese from not sealing it together as well as I should have. The fork seemed to work better.

Another note: Third time I pulled up the bottom of the bread over the top and pushed it down. Then I crimped it with a fork. It worked!! I didn't have any cheese leaking out of the hot pockets the third time around. Third times a charm!
I covered my cookie sheet with aluminum foil and greased it with shortening or you could spray Pam. Brush tops with the remaining egg wash.
Baked at 350 degrees for about 25 minutes - until golden brown. I brushed them with butter after I removed them from the oven. Then put on a cooling rake to cool.
Individually wrap each hot pocket and put it in a gallon freezer bag.
To re-heat, take one out. Remove plastic wrap, microwave for 2 minutes.. Yum! They turned out and were delicious. A quick meal - better then fast food. Also a great way to use up left over ham, so it doesn't go to waste.

I was thinking about trying a breakfast hot pocket with egg, ham and cheese. I think that if you barely cook the egg - where it is runny... it might work. I'm going to give it a try.

I'm also thinking about a pizza type of hot pocket with pizza sauce inside too.

Homemade rocks! Better then store bought any day of the week.

  2. i make homemade pizza calzones and we love them! I love stuffing them full of our favorite things!!! The fun part is everyone can make their fav...and I love making extra for lunches!!

  3. looks so yummy!!! I will have to make some, because my kiddos love eating hot pockets for snacks--I think I will just make them smaller so they are snack size. thanks for sharing!

  4. I just baked up a turkey today and remembered seeing your Hot Pocket recipe for ham, but couldn't quite remember how you did it.

    I want to make turkey and Swiss cheese pockets with some of our leftover turkey.

    You have the BEST ideas and I love how happy and frugal you are! You're a sweetie and inspire me greatly!

You have very good website So much on it. I will be back to see what all you have on it.
