Recipe: Fried Chicken

Ingredients:
30 saltine crackers
2 Tablespoons flour
2 Tablespoons potato flakes
1 teaspoon seasoned salt
1/2 teaspoon black pepper
1 egg
1/4 cup vegetable oil
6 boneless, skinless chicken breasts halves.
 Place crackers in a large Ziploc bag.
 Crush crackers until they become coarse crumbs. 
Add flour, potato flakes, seasoned salt, and pepper.
 Beat egg in a shallow bowl. Begin heating oil in a large skillet over medium-high heat.

Dredge each piece of chicken in egg, then place in Ziploc bag and shake to coat. 
 Reduce heat to medium-low and cook chicken is skillet for 15-20 minutes, turning frequently (about every 3 minutes or so).
Juices should run clear and breading should be a crispy golden brown.

Good fried chicken.

My husband loves fried chicken, and I never make it! I'll be trying this recipe for sure.

Well, the chicken was might tasty!

Had this last night for dinner, along with mashed potatoes and fresh Italian Beans from my garden...

I have put the recipe in my recipe box. It is a keeper!
