Canning Whole Tomatoes

It's time to start canning tomatoes! Yeah ripe tomatoes! Yum! Use only firm fruit which is unbruised and disease-free. Do NOT can tomatoes from dead or frost-killed vines.
First you wash the tomatoes. Boil a pan of water. Scald the tomatoes in boiling water long enough to remove the peel about 10-30 seconds.
Plunge them into cold water.
You can see how the skin is peeling away from the tomato and ready to be peeled.
Cut out the core.
Then the peel just slides right off the tomato.
Then place the whole tomato in a clean quart canning jar.
In this first canning I was able to get 4 quarts of tomatoes! Woo Hoo! Little by little, my food storage will be filled by winter. Leave 1/2 inch of top.
Run a knife down the sides of the jar to remove all of the trapped air bubbles (this prevents the jars from bursting during the canning process.
Add 1 teaspoon of salt to quart jars. 1/2 teaspoon to pints.
Wipe the mouth of the jars and make sure they are clean. If they are not clean the canning lids will not adhere to the jars and they will not seal.
Boil the canning lids for a minute. Put the boiled lid, screw band or ring on firmly tight.
Place in a hot pack water bath. The bottles need to be complete submerged in the water (water over the tops of the jars).

Process in Boiling Water Bath - the process time begins AFTER the water starts boiling.

Pints 35 minutes
Quarts 45 minutes

One of my favorite ways to use my canned tomatoes is in Spaghetti Sauce 
and Chili.

Whole tomatoes are sooooo much work, but...don't they look so pretty in your jars when you're finished? I'm hoping we get enough tomoatoes to do the same thing. Ours are still green, DARN IT!

AND...thank you for sharing the spaghetti sauce recipe. I've been wanting to find a good one, so I wouldn't have to purchase Ragu or Prego anymore. Save some pennies.

Now after all this work, put in a good movie, put your feet up, and relax.

Sorry, I haven't commented much, but we have spent the past week preparing for and going on our yearly backpacking trip.

I LOVE this tutorial on canning tomatoes. I have never canned tomatoes, but I am going to give it a try this year as we are going to have an abundance of tomatoes...hopefully they all ripen because we have LOTS of green tomatoes right now.
